Specifically, the vitamins contain 'modified food starch', the source of which I cannot ascertain, and I would like to know if my wife can continue taking them over pesah.

In most cases, refraining from taking prenatal vitamins for 7 days doesn't cause any harm.
So please consult your physician about the above possibility.
In rare cases, where the medical situation is such that taking these non-chewable pills is mandatory- they are allowed.
