According to halakha, irreversible cessation of breathing is the proof of death. Brain death is not enough (I think, but I am not sure) to prove death.
If this is true, wouldn’t cessation of breath cause vital organs (i.e., the heart or lungs) to become unsuitable for transplantation? Doesn’t putrefaction begin with cessation of breathing?
You can find answers to your questions in Prof. Abraham Steinberg's Encyclopedia of Jewish Medical Ethics, (En) Feldheim Pub. Jerusalem 2003, Vol. II pp. 695-711 in "Moment of death" entry.
There is an online Hebrew version – "קביעת רגע המוות"
The Encyclopedia has a searchable portal for this database on the Schlesinger institute website.
